MILKFISH Bakeshop is coming to The Club with dishes shaped by memory, culture, and care. Inspired by Kimmie Mcintosh’s Filipino-American upbringing, MILKFISH lives somewhere between nostalgia and curiosity. Familiar flavors, imagined with intention. Made from the heart.
In 2024, Kimmie and Josh Mcintosh were named James Beard semifinalists for Outstanding Pastry Chef or Baker, with Kimmie earning the nod again in 2026.
For the DSC pop-up, Kimmie offers an all-day à la carte menu of her most notable baked goods alongside savory bites. This pop-up offers a first look at MILKFISH as a bakery-style storefront, a place to linger and enjoy. Come by, meet the maker, and spend some time with a true Las Vegas gem.
Kimberly Mcintosh is the chef and co-owner of MILKFISH Bakeshop. She spent much of her cooking and baking career in Santa Barbara, CA, where she graduated from culinary school, before transitioning to the front-of-house. She worked her way up to managing restaurants in the San Francisco Bay Area, before moving to Las Vegas at the end of 2013.
When the pandemic hit, she decided to take a step back from working in restaurants. She and her husband Josh hosted their first virtual bake sale with Bakers Against Racism, a baking collective which raises money for nonprofit organizations that address racial and social injustice.
Over the next two years, they continued to host these bake sales, often with other Vegas bakers, donating all net proceeds to organizations such as Three Square, Safe Nest, The Center, and the American Federation of Suicide Prevention (Nevada Chapter). To date, MILKFISH Bakeshop has raised over $24,000 for nonprofits.
In 2022, they hosted their first pop-up at Vegas Test Kitchen in Downtown Las Vegas. Kimmie loves to create her bakes as a way of staying connected to her heritage, sharing it with others, and learning more about the history of Filipino cuisine and culture.
In 2024, Kimmie and Josh were nominated as James Beard semifinalists for Outstanding Pastry Chef or Baker, and in 2026, Kimmie earned the semi-finalist nomination a second time.
When she is not baking, Kimberly loves to work out and spend time with her family, especially her 9-year old daughter, Leia and 6-year old son, Cooper.
