Durango Social Club welcomes Istorya to its chef-driven lineup, marking the award-winning Filipino pop-up’s first weekly dining residency. Every Tuesday and Wednesday night, Chef Dio Buan presents an a la carte Filipino menu shaped by lived experience and fine-dining training. Designed for sharing, the residency invites locals and visitors alike into a cultural dining experience grounded in food, story, and community.
“For the past three years, Istorya has explored Filipino history through distinct chapters — from pre-colonial foodways to Chinese-Filipino and Muslim-Filipino cuisines,” says Istorya founder Walbert Castillo. “This residency marks a shift: rather than centering a single historical chapter, we’re grounding the experience in Chef Dio Buan’s own istorya — his childhood in Manila, his journey to Vegas, and the work he’s done since. Here, the food carries the story, and the menu becomes the narrative.”

Chef Dio Buan
Chef Dio Buan has over 11 years of experience in the culinary industry, grounded in classic and French fine dining. He has worked in kitchens led by acclaimed chefs including Bobby Flay and Thomas Keller, and trained alongside teams mentored by the late Joël Robuchon. These experiences shaped his disciplined approach to technique, precision, and craft.
Currently a Master Cook at Joël Robuchon Las Vegas, Chef Dio brings fine-dining rigor to dishes rooted in his upbringing. Born in Manila and later moving to the United States, he returns through Istorya to the flavors he grew up cooking and eating, reimagining Filipino dishes with respect for tradition and attention to detail.
Through Istorya, Chef Dio balances heritage and technique—honoring Filipino cuisine as it is lived and practiced, while presenting it through the lens of fine dining. His cooking reflects both home and training, shaped by memory, discipline, and a deep sense of place.
